Pink Coconut Balsamic Smoothies
1 medium beet, ends trimmed, roughly chopped
2 cup of water
1 cup of frozen halved strawberries (wholes are too intense for blender, unless your blender is super awesome)
1 cup of frozen or fresh mango (approx one mango)
2 TBSP of Coconut Balsamic
Deceptively nutritious and quite delicious, this is a great way to sneak in veggies and fruit into your kids, partner or parents. You can also pour it into freezer popsicle molds to make it into fun frozen snacks for hot summer days. Very simple to make, all you need are the items above and a blender!
Blend beet and water together until smooth. Add Strawberries, Banana, Mango and Coconut balsamic. Blend until smooth. Pour into glasses or into popsicle molds Enjoy!
